Free.Get all the latest Pasadena news, more than 10 fresh stories daily, 7 days a week at 7 a.m. La Cañada Flintridge, the sleepy woodland community just West of Pasadena, finally has a foody destination with the grand opening of The Flintridge Proper neighborhood restaurant and bar. Completing a month of soft openings, The Proper celebrates its official Grand Opening on Wednesday, April 24th with a fresh, farm-to-table approach to American Comfort Food and a Classic Cocktail Lounge boasting the country’s largest selection of GinCreated by local entrepreneur and longtime area residents, Brady Caverly and his wife Mary Elizabeth, The Proper seeks to provide the sophisticated community with a higher level of food and service than previously offered in the area.“Flintridge is an affluent community of folks who are used to eating at fine restaurants downtown or on the West Side but live here so they can send their kids to our world class schools. We thought, why not provide that same quality of cuisine and service right here in an environment where they can enjoy it with their families – a place where the kids can enjoy housemade mac and cheese, freshly baked Turkey Pot Pie or our tableside Sundae Cart while mom and dad enjoy a really great piece of meat or high-end fish with a glass of fine wine or a properly made cocktail.”To realize their vision, the Caverlys recruited the former Executive Chef of District & Mercantile, Kevin NaPier, who also ran mornings and brunch at Joe’s in Venice and most recently finished a stint of fine dining as Chef de Cuisine at the Patina Group’s Founder’s Room, to run the kitchen.Serving breakfast, lunch and dinner as well as gourmet coffee and freshly baked pastries throughout the day and a gastropub menu late into the night, the menu features NaPier’s trademark farm-to-table approach to “Classic American Comfort Food” as well as a rotating menu of daily specials.NaPier seeks to “make this truly a neighborhood restaurant, with a real emphasis on fresh, local ingredients.” And he means it. For the Foothills Greens Salad, NaPier had his lettuce purveyor plant the greens that grow wild in the La Cañada Flintridge foothills. “These are the same plants that the Hahamongna Indians, the areas original residents, would have eaten hundreds of years ago. And they’re delicious.” He’s committed to making almost everything from scratch from the English Muffins and Breakfast Sausage in the morning to the housemade American Cheese on his house-ground, Proper Burger.The same fresh, local approach has been applied in the bar. With a cocktail program designed by 13 Stitch’s Billy Ray, of Blind Barber fame, and Caverly, a self-avowed “cocktail geek,” the bar menu offers classic cocktails made with fresh juices and premium spirits as well as local specialties that feature the flavors of the area – like the fresh rose petals that garnish the champagne-based “Descanso Cocktail,” celebrating La Cañada’s famed Descanso Gardens.The bar at the Flintridge Proper boasts the nation’s largest selection of gin. Says Caverly, “So many of the great classic cocktails are gin based and they possess such a wide variety of flavor profiles, so we set out to amass the largest collection in the country.” The Proper’s collection features old and rare gins from all over the world and as far back as 1963. They even make their own Flintridge Gin, ”a classic London Dry-style with local botanicals like the fennel and sage that grow wild in the area foothills.” In addition to more than 190 different gins, the bar includes a selection of premium and super premium scotches, bourbons, ryes, vodkas and the other cocktail spirits as well as an extensive wine list.Housed in the former home of local Mexican favorite, Los Gringos Locos, the space was completely gutted and created anew by Sam Marshall, the gifted architect/designer behind Gjelina in Venice and Laurel Hardware in West Hollywood. Divided roughly in half, with a bright, family-friendly bistro-style dining room on one side, and a wood and leather-lined, old-school cocktail lounge on the other, Marshall created a space that references the culture and history of this storied neighborhood, with historical photos and local memorabilia, and a celebration of the area’s deep equestrian heritage including a stitched leather ceiling and a massive horsehead arch over the well-stocked bar – an exact replica of an arch which long ago crowned the entrance Flintridge’s famed bridle trails.According to Marshall, the space was designed to “transform throughout the day.” Illuminated with two big skylights which create bright and airy spaces with upscale bistro and coffee-house vibes by day, at night, when the sun goes down and the warm lights softly illuminate the wood of the bookshelf-lined walls or the leather-lined ceiling in the lounge, the space becomes much more intimate and formal – appropriate for a late night cocktail or romantic dinner.Says Mary Caverly, “We really wanted to create a place that would serve the entire community throughout the day. In this age of homogenous big box restaurants, we believe intimate communities like ours crave truly, local and authentic places to gather and enjoy really good food, a properly made cocktail or a good glass of wine and each other’s company.
